Roasted Red New Potatoes

Always the perfect accompaniment to beef, chicken, pork, or fish.
PREP TIME: 10 minutes
COOK TIME: 40 minutes
1.5 pounds red new potatoes
2 tablespoons olive oil
1 tablespoon thyme
1 tablespoon sea salt
  1. Wash potatoes and pat dry with a paper towel.
  2. Place potatoes in a large bowl, coat with olive oil, tossing until well coated.
    Sprinkle thyme and salt over potatoes and toss until well mixed.
  3. Place potatoes in a baking dish in 400° F. oven for 40 minutes or until tender when poked with a fork.
