A gourmet sandwich for a sophisticated palate...Great filling for a lettuce wrap!
PREP TIME: 20 min.
1/2 c mayonnaise
1 T fresh lemon juice
1/2 t finely grated lemon peel
1/2 t chili powder
1 c fresh crabmeat, chopped
1 c cooked shrimp, chopped
1/2 c celery, finely chopped
1/2 c onion, finely chopped
8 slices firm white sandwich bread
1/4 c unsalted butter, melted
Combine the mayonnaise and next 3 ingredients in a medium size bowl. Gently stir in crabmeat, shrimp, celery, and onion. Season filling with salt and pepper.
Place 4 slices of bread on a work surface and spread 1/4 of the filling on each slice. Top with remaining slice of bread, press together. Brush top of bread slice with melted butter.
Heat griddle over medium heat. Place sandwiches, butter side down on hot griddle. Cook until golden, 6-7 min. Brush top of each sandwich with remaining butter and flip sandwiches over. Cook until golden about another 5 min.
Cut Sandwiches in half. Sprinkle with parsley and serve.
