Cayenne Cheddar Rounds
A perfect accompiment to a glass of wine!!

1/2 cup butter Pinch of salt 1/4 t freshly ground black pepper Pinch of cayenne pepper (adjust for personal taste) 2 cups (about 8 ounces) sharp white cheddar cheese, finely shredded 1 cup all-purpose flour
Beat together the butter, salt, pepper and cayenne on low speed just until blended. Add cheese and flour, mix at low speed until smooth (do not overmix).
Shape the dough into a round log 8-10 inches long by 2-2 1/2 inches in diameter, wrap in plastic wrap or waxed paper and chill for at least 1 hour.
Preheat oven to 350 degrees. Line baking sheet(s) with parchment paper.
Remove dough from fridge and, using a very sharp knife, cut 1/8-1/4" slices. Place rounds on parchment lined baking sheets and bake for 13-15 minutes.
Cool on sheets for 5 minutes, then transfer the rounds to racks and cool completely. The longer they sit the more the more flavorful they become.
