Potato Cakes with Sour Cream and Chive Topping

Leftover mashed potatoes make the perfect breakfast side dish or a small bite appetizer!!

2 cups mashed potatoes 1 egg, beaten 1/2 cup all-purpose flour 1 cup shredded cheddar cheese salt to taste 1 pinch garlic salt 1 T butter 1/2 cup sour cream 2 T fresh chives
In a medium bowl, combine mashed potatoes, egg, flour, cheese, salt and garlic.
In a large frying pan, melt butter over low heat. Drop potato mixture into frying pan, pat down into 2-3" sized patties 1/2" thick. Flip the potato patties when bottom is brown, approximately 10 minutes. Brown the other side, also for approximately 10 minutes.
In a small bowl, mix together 1 Tbsp chives and sour cream. Place a dab of sour cream and chive mixture over each potato patty. Sprinkle remaining 1 Tbsp of chives over sour cream and serve.
