Chicken Schnitzel Sandwich
Take Schnitzel to a new level with this zesty flavorful chicken, topped with spicy mustard, lettuce, tomato and onion and placed on a grilled bun. It's sure to become a favorite!!

COOK TIME: 6 min.
1 large egg
1 clove garlic, minced
1/2 t minced fresh parsley
1 c fresh bread crumbs (from white bread)
1/2 c grated parmesan cheese
4 (3 oz) chicken cutlets, pounded to 1/4" thickness
4 T olive oil
1 T butter
1/4 c dry white wine
1/2 c chicken broth
1 t flour
1 T fresh lemon juice
4 whole wheat or kasier buns
Toppings: Sliced tomatoes and onions, lettuce leaves, pickles and spicy mustard.
Beat egg in a shallow bowl with minced garlic, parsley, salt and pepper.
In separate shallow bowl, combine breadcrumbs and parmesan cheese.
Dip each cutlet into egg mixture to coat completely, then dredge in breadcrumb mixture, pat crumb mixture on cutlet to help it stick.
Heat olive oil in a large non-stick skillet over med-high heat. Cook cutlets until golden brown and cooked through, about 3 minutes per side. Set cutlets aside on an oven proof platter and keep warm.
Heat butter in skillet until melted and add wine, stir or about 30 seconds. Add 1/4 C chicken broth and lemon juice. Wisk 1t flour into remaining chicken broth until smooth to create a slurry. Wisk slurry into butter/wine/lemon mixture. Season with salt and pepper. Simmer 2 minutes, until thickened. Pour mixture over cutlets, set aside.
Grill Buns until toasty. Place schnitzel on bun and serve with toppings.
