Ham, Spinach and Cheese Cups

Pop one of these in your mouth and savor the five melted cheeses, spinach and ham all wrapped in pastry dough. Yum!
PREP TIME: 20 minutes
COOK TIME: 18 minutes
1 box (9 ounces) frozen spinach, thawed and squeeze drained 1/3 cup garlic and herbs spreadable cheese 1/4 cup shredded mozzarella cheese 1/4 cup shredded 5-cheese Italian cheese blend 3 tablespoons freshly grated Romano 2 tablespoons shallot or onion, finely chopped 1/4 teaspoon garlic powder 1/8 teaspoon salt 1/8 teaspoon pepper 2 cans refrigerated Crescent style seamless dough sheet 1 pkg (9 ounces) smoked ham, paper-thin slices (4" diameter). Do not use shaved ham. 1/4 cup freshly grated Parmesan cheese, for topping
Preheat oven to 350 degrees F.
In a medium bowl, mix spinach, cheeses, shallot, garlic powder, salt and pepper until well blended. Use a rolling pin to roll dough sheets into 6" x 8" rectangle. Cut each sheet into 12 squares (2"x2"). Place each square into an ungreased 24 cup mini-muffin pan.
Use a paper towel to pat dry ham slices. Place 1 ham slice over dough in each cup. The edges of the ham should be higher than the pastry cup. Spoon rounded teaspoon of spinach mixture onto ham in each cup.
Bake for 14-18 minutes or until crust is golden brown and filling is hot. The ham will turn brown along edges. To prevent excessive browning, lightly cover with foil half way through baking. Cool in pan for 1 minute, remove from pan and let stand for 3 minutes.
Sprinkle with Parmesan cheese just before serving.
