Easter Basket Cake

Adorn your Easter dinner or buffet table with this festive and decorative cake.  We made an orange cake and it was delicious.
PREP TIME:   20 minutes

1 box orange cake mix (or a yellow, white or lemon cake mix or your favorite recipe can be used)
2 cups sweetened shredded coconut
4-5 drops green food coloring
1 pound confectioner's sugar
1/4-1/2 cup milk
jelly beans, M&Ms, or other Easter candy

  1. Cake:  Prepare cake according to instructions in a bundt pan.   Let cool then turn out on a cake rack to cool completely.
  2. Grass: Place coconut in a resealable plastic bag, add green food coloring and shake until coconut turns green.
    Icing: Mix confectioner's sugar and milk to a consistency that is thin enough to ice cake, but not so thin that it does not adhere. 
  3. Decorating: Ice the upside-down cake, as it sits on the cake rack, and let it dry. The icing may run, so place a plate underneath to catch the drippings, then it can be used to ice the top of the cake.  The icing will dry fairly quickly, so once dry, turn cake onto a serving plate and ice the top of the cake with remaining icing. Sprinkle on the coconut. Add jelly beans, M&M's and other candies on top of the coconut grass. Using and 18" x 4" piece of aluminum foil, fold it lengthwise four times to 1/2" thickness.  Starting at one end, wrap the foil with ribbon and secure both ends. Insert one end into right top side of cake, then shape and arch across the cake inserting the other end on the opposite side.
