Chuckwagon Stew

A sophisticated blend of spices makes this a delicious "gourmet" cowboy stew!

COOK TIME: 3 hrs.

2 T flour

2 lbs. beef, cubed

1 T paprika

1 t chili powder

2 t salt

3 T vegetable oil

2 onions, sliced

1 garlic clove, minced

2- 14 oz. cans diced tomatoes

1 1/2 T cayenne pepper

1 T cinnamon

1 t ground cloves

1/2 t red peppers

6 russet potaotes, peeled and chopped bite size

2 c carrots, chopped



  1. Mix flour, paprika, 1 t chili powder and salt.  Dredge the beef in the flour mixture.  Heat oil over medium high heat in a large dutch oven.  Brown meat in the hot oil.  Add onions and garlic, cook until onions are transluscent.  Add remaining ingredients, except potatoes and carrots, cover and simmer 2 hours (adding water if needed; 1/4 cup at a time).  Add potatoes and carrots, cook until vegetables are tender, about 45 min.
