Grapefruit and Avocado Salad with Asian Dressing

The soy sauce in the dressing brings an interesting combination of flavors together with the avocado & grapefruit.
PREP TIME:  10 minutes

3 ounces rice wine vinegar

1 ounce soy sauce

1/4 teaspoon ground ginger

1 clove garlic, pressed

2 tablespoons sugar

5 ounces vegetable oil

4 ripe Hass avocados

2 large red grapefruits

  1. Whisk together vinegar, soy sauce, ginger, garlic, sugar and vegetable oil. 
  2. Cut the avocados in half, remove the seeds and peel off the skin.  Cut each half into 4 slices.  Place avocados in a bowl and lightly toss with some of the dressing to keep the avocados from turning brown.
  3. Use a sharp knife to slice and peel the skin off the grapefruits; be sure to remove all the white pith, then cut between the membranes to release the grapefruit segments.  Alternate grapefruit and avocado slices and drizzle with remaining dressing.
