Artichoke Curry Wheat Berry Salad
What could be better than a healthy salad with amazing flavor?

PREP TIME: 20 minutes
COOK TIME:  2 hours

1 cup whole wheat berries

3 cups chicken broth

3 green onions, sliced- tops and all

1 small yellow pepper, seeded and diced

20 stuffed olives, sliced

2 - 6 ounce jars marinated artichoke hearts, drained (reserve marinade) and chopped

1/2 cup light mayonnaise

1/4 teaspoon curry powder

  1. Soak wheat berries in chicken broth and refrigerate mixture overnight.  Next morning, simmer wheat berries until soft, approximately 1/2 to 1 hour; add more liquid if necessary.  Once berries are soft, drain any excess liquid.  Add green onion, pepper, olives and artichokes to the wheat berries.
  2. In a samll bowl, blend mayonnaise, curry powder and 1/4 cup reserved artichoke marinade.  Stir mixture into wheat berries and mix thoroughly.  Chill for several hours, or overnight, before serving.
