Winter's Bounty Salad
This salad has many layers of flavor....Delicious!  In addition to tasting great, it's a very pretty salad to serve.

  • 1/3 cup walnut pieces
  • 2 tablespoons white sugar
  • 1 bag of baby greens
  • 3 green onions, chopped
  • 1 tart green apple, cored and chopped
  • 1 medium avocado - peeled, pitted, and chopped
  • 1/2 cup dried cranberries
  • 1/4 cup crumbled Gorganzola cheese 
  • Dressing:
  • 2 teaspoons white sugar 
  • 2 tablespoons red wine vinegar
  • salt and pepper to taste
  • 1/4 cup vegetable oil
  1. Place walnuts and 2  tablespoons of sugar in skillet over medium-low heat, stir continuously until the sugar melts and the walnuts are coated and turn golden. Remove from heat and allow to cool.
  2. In a large bowl, mix the baby greens, green onions, apple, avocado, cranberries, Gorganzola, and prepared walnuts.
  3. Whisk vinegar, 2 teaspoons of sugar, and salt and pepper in a bowl, and whisk in the vegetable oil. Pour dressing over the salad, and gently toss to combine.
