Orange & Onion Salad with Pomegranate Vinaigrette

INGREDIENTS

1 c pomegranate seeds

4 lg. oranges

2 T salad oil

2 T red wine vinegar

3 qt. lettuce (butter leaf, endive & romaine)

1/2 c thinly sliced red onion rings

Salt & Pepper

DIRECTIONS
  1. Lettuce - Rinse, tear into bite size pieces and crisp. 
  2. Dressing - Grate one orange rind to accumulate 1 t. of long thin shreds.  Squeeze the orange to make 3 T juice.  Whisk peel, juice, oil and vinegar til combined.  Stir in pomegranate seeds (This can be made two days ahead and stored in the refrigerator).
  3. Peel remaining 3 oranges and cut into thin slices.  In a large bowl combine oranges, lettuce and onion.  Pour dressing over, add salt and pepper to taste.  Toss and serve.
