Lemon Vinaigrette Potato Salad

This twist on potato salad is light and healthy, but doesn't skimp on flavor.

INGREDIENTS

2 pounds new potatoes

3 teaspoon salt

1 clove garlic, crushed

1/8 teaspoon black pepper

2 teaspoons grainy mustard

1 lemon zest

1/4 cup lemon juice

1/4 cup olive oil

1/3 cup green onions, chopped

DIRECTIONS
  1. In a large pan, cover new potatoes with water, add 2 teaspoons of salt, bring to a boil, and then simmer for about 12-15 minutes or until tender.
  2. In a small bowl, add the crushed garlic, 1 teaspoon of salt, mustard and the black pepper.  With the back of a spoon, mash the salt, pepper and garlic together.  Zest the lemon and add it to the bowl.  Gradually whisk in the fresh lemon juice and olive oil.  Set aside.
  3. Drain the potatoes in a colander; once cool enough to handle cut the potatoes in half.  Put the potatoes into a flat dish large enough so the potatoes are not layered.  Pour the vinaigrette dressing over the potatoes while they are still hot.  Gently toss them around in the dressing, then let them sit for a few minutes to absorb the dressing.  Put the potatoes into a decorative serving dish and scatter the green onions on top.  Serve warm or at room temperature.
