Crunchy Kraut Salad

An unexpected twist using sauerkraut (rather than cabbage or lettuce) for this sweet/sour vinagrette based salad.  Since the kraut is soaked before hand, the flavor is mild.  The addition of the celery and pepper make it wonderfully crunchy!

PREP TIME:  15 min + chilling
INGREDIENTS

14 oz. sauerkraut, rinsed and well drained

1/2 c chopped celery

1/2 c chopped green pepper

1/4c chopped onion

1/2 c sugar

1/4 c white vinegar

1/2 celery seed

DIRECTIONS
  1. In a large bowl combine sauerkraut and chopped veggies; set aside.
  2. In a samll saucepan bring sugar and vinegar to a boil, cook and stir for 1 min.or until sugar dissolves.  Remove from heat and cool slightly.
  3. Pour dressing over sauerkraut and veggie mixture.  Toss to coat and sprinkle with celery seed.  Refrigerate for 1 hr. for flavors to develop.  Serve with slotted spoon.
