Spring Salad with Poppy Seed and Citrus Dressing

Enjoy this light, crisp, flavorful salad that works well as a dinner starter or can be served as a main course for a light lunch.  The dressing is exceptional and there's plenty, so start with a little, taste and then add more to your liking.
PREP TIME:   15 minutes

1/4 cup orange juice
2 tablespoons white wine vinegar
2 green onions, chopped
1/3 cup sugar
1/4 teaspoon salt
1/3 cup olive oil
1 tablespoon poppy seed

8 cups torn romaine lettuce
1 cup cubed (1/2"-3/4") honey dew melon
1 cup cubed cantaloupe
1 cup quartered strawberries
  1. Dressing: In a food processor, combine orange juice, vinegar, onions, sugar and salt; cover and blend well. With the machine running, slowly add oil and blend until thick and smooth. Add poppy seeds and blend a few seconds.
  2. Salad:  In a large salad bowl, toss romaine and fruit to mix.  Add half the salad dressing and toss to coat.  Taste, and add additional dressing to your liking.
  3. Store any left over dressing in an air tight container in the refrigerator.
