Apple Chicken Salad with Basil and Mint

This salad is excellent!  Even the guys liked this.  Lots of chicken and apples mixed with the amazing fresh flavors of basil, lime and mint make this a definite go to recipe.


PREP TIME:  20 minutes
COOK TIME: 10 minutes

4 (6 ounce) boneless, skinless chicken breasts

Salt and pepper to taste

1/4 cup fresh lime juice (1-2 large limes)

1 tablespoon rice vinegar

2 tablespoons light brown sugar

4 scallions, sliced (white and green parts)

2 Granny Smith apples, diced (peeled, if desired)

1/3 cup pecans, chopped

2 tablespoons thinkly sliced fresh mint

1/2 cup thinly sliced fresh basil.

  1. Pat chicken breasts dry with paper towels.  Pound each breast to an even thinness.  Place chicken in a large suacepan, add water to cover by 1/2 inch, add 3 tablespoons salt and 1/2 teaspoon pepper; bring to a gentle simmer.  Cook for 8-10 minutes until there is no trace of pink.  Transfer chicken breasts to a bowl of ice water for 5 minutes.  Pat chicken breasts dry with a paper towel, dice and set aside.
  2. In a large bowl, combine the lime juice, vinegar, and sugar; stir until the sugar dissolves.  Toss in the scallions, apples, chicken, pecans, mint, and basil.  Salt and pepper to taste.
