Scared White Chili
This ghoulish white chili is so easy it may just stand your hairs on end!
PREP TIME:  15 min.
COOK TIME: 14 min.
1 T olive oil
1 T butter
1 medium onion, chopped
2 cloves garlic, minced
3 cups cubed cooked chicken (or turkey)
2 cups cooked wild rice
1 can white beans
1 can white corn
2 cans diced chiles
15 oz. chicken broth
3 t cumin powder
1-4 dashes of Tabasco sauce- to taste
6 ounces Monterey Jack cheese, shredded
  1. In a large skillet, heat oil and butter over medium heat.  Add onion and garlic and saute until soft, 3-4 minutes.
  2. Add chicken, rice, beans, corn, chilis, chicken broth, cumin and Tabasco. 
  3. Cook until thoroughly heated, about 10 minutes.
  4. For Halloween or an Autumn party hollow out a pumpkin to use as a chili tureen.
    Ladle into individual bowls and top with cheese.
