Toads in a Hole

If you like yorkshire pudding and sausages, you'll love these.  Serve them with pub mustard or Major Grey's Mango Chutney!

PREP TIME: 50 minutes
INGREDIENTS
4 large, fresh eggs broken into measuring cup
Equal amount of milk to eggs
Equal amount of all purpose flour to eggs
Pinch of salt
2 TBSP vegetable oil
6 beef or pork sausages

DIRECTIONS
Heat the oven 500 degrees
Pour the eggs and milk into a large mixing bowl and add the pinch of salt.
 Beat thoroughly with an electric mixer.  Let rest for 10 minutes.
Gradually add flour into the milk and egg mixture, beating with electric mixer.  Batter should be lump free and resemble thick cream, if there are any lumps pass the batter through a fine sieve.
Let the batter rest for a minimum of 30 minutes, longer if possible - up to several hours.
Place 1/2 tsp vegetable oil in  Yorkshire pudding or muffin tins and heat in the oven. Cut each sausage into 1 1/2 inch pieces and place in the hot pudding/muffin tins.  Return the tins to the oven. Cook until the sausage pieces are golden brown (approx 15 mins) golden.
Wisk the batter adding 2 tbsps of cold water.
Fill each tin 1/3 full with batter and return quickly to the oven.
Bake until golden brown- approx 20 minutes. Repeat with remaining batter.
