Fried Grits

It doesn't get more down home than this...If you love grits, imagine them fried and served with a pat of butter.  YUM!!

PREP TIME:  5 min. (overnight)
COOK TIME: 25 min.
INGREDIENTS

1 c Albers grits

4 c water

1/2 t salt

2 eggs

1 c plain bread crumbs

Butter, melted

DIRECTIONS
  1. Bring water to a boil with salt.  Slowly add grits while stirring.  Reduce heat, cover and simmer for 20 min.  Pour prepared grits into a greased loaf pan.  Place in refrigerator and chill at least 6 hours or overnight.
  2. Place eggs in a flat bowl and whisk. Remove the loaf of grits from the pan and cut into 1/2" slices. Dip each slice into whisked eggs and then bread crumbs.  Fry in melted butter until golden brown.  Serve warm with a pat of butter on top.
