French Onion Casserole

It tastes like French Onion Soup, but you can eat it with a fork, and the mushrooms make it even better!

3 medium sweet onions
2 T butter
8 oz sliced button mushrooms
2 c shredded Swiss cheese - divided
1 can (10 3/4 oz.) cream of mushroom soup
1 can (5 oz.) evaporated milk
2 t soy sauce
6 slices (1/2" thick) French bread
1/4 c parsley, finely chopped
  1. Cut onions into 1/4" slices, then cut slices in half.
  2. Melt butter in a large skillet over medium-high heat.  Add onions and mushrooms, cook until tender, stirring regularly, about 10 minutes. 
  3. Spoon mixture into a lightly greased 2-quart baking dish.  Sprinkle 1 cup Swiss cheese over onion and mushroom mixture. 
  4. In small bowl stir together soup, milk and soy sauce, then pour over the cheese.
  5. Top the casserole dish with the bread slices, and sprinkle with the remaining 1 cup of cheese and 1/4 cup parsley. 
  6. Cover and bake at 375 degrees F. for 30 minutes.  Uncover and bake for an additional 15-20 minutes or until thoroughly heated and top side of bread is crusty.  Let stand for 5 minutes before serving.
