Julia Child's - Homemade Mashed Potatoes

These potatoes are so Julia...Cream, butter, use a ricer, add driblets of milk and they turn out to be so delicious.
PREP TIME:  15 min.
COOK TIME: 30 min.

4 - 5 large baking potatoes


1/2 c cream, heated in a saucepan

2 + T Saftened butter

Freshly ground white pepper

  1. Wash and peel the potaoes and cut into quarters.  Set in a saucepan with lightly salted water to cover ( 1 1/2 t salt per quart of water).  Bring to boil, cover loosely, and boil 10 - 15 minutes longer, until potatoes are tender when pierced with a fork.  Cut a piece in half and eat a bit to be sure they are just done; undercooked potatoes will not mash properly.  Drain the water out of the pan; toss the potatoes over moderate heat for a moment, until they begin to film the pan; this is to evaporate excess moisture. 
  2. While still warm, either put the potatoes through a ricer (Julia's prefernece) and return to the pan, or place in a large bowl of your electric mixer and, using the wire whip attachment , moderate speed; puree with 1/4 c cream.
  3. Beat in 'driblets' of hot ceam, alternating with 1/2 Tablespoons of butter - careful not to make them too soft.  Season with salt and pepper to taste.  The sooner you can serve them, the better.
