Prune Chutney
The sweetness of the prunes, tang of the vinegar and spice from the pepper make a delicious combination.

COOK TIME:  1 hr

3 1/2 c pitted prunes, halved

1 c dark brown sugar

1 c sugar

3/4 c cider vinegar

1 1/2 t crushed red pepper flakes

2 t mustard seed

2 lg. garlic cloves thinly sliced

1/4c thinly sliced onion

1/2 c. thinly sliced candied ginger

1 c white raisins

  1. Bring 2 c water to boil, pour over prunes and soak over night.  Mix sugars and vinegar, bring to a boil, add all other ingredients except prunes.  Mix well, drain prunes and add to mixture.  Simmer over medium low until thickened, about 1 hour, stirring often.  Can be stored in the refrigerator up to 1 month.
