Peach/Tomato Relish
This relish is unexpected.  Sweet with a bit of a zing from the ginger and curry. Serve it with meats or use it as a spread on sandwiches and burgers.
PREP TIME: 15 minutes

1 1/2 lb frozen peach slices
8 oz canned chopped unsalted tomatoes- slighlty drained
1 medium sweet onion- chopped
1 1/2 tablespoons minced peeled fresh ginger
1 teaspoon sea salt
1 tablespoon olive oil
1 1/2 teaspoons curry powder
2 1/2 tablespoons sugar
1 tablespoon fresh lemon juice 


Cut peaches into 1/2-inch pieces.
Cook onion and ginger in olive oil, stirring occasionally, until softened. Add salt and curry powder.  Cook, stirring constantly, 1 minute. Add peaches and tomatoes with any juices, sugar, and lime juice.  Simmer, uncovered, stirring occasionally, until mixture is thick and peaches are tender but still hold their shape, approx 8 to 10 minutes. Transfer to a bowl and chill for 8 hours.
