Grilled Shrimp, Andouille Sausage, and Cole Slaw Sandwiches

INGREDIENTS

1/2 pound shrimp, thawed (approx. 6-8)

1 teaspoon salt

1 teaspoon fresh ground black pepper

2 Andouille sausages, cut into 3 pieces each

3-4 green onions, cut into 2 inch pieces

3 tablesppons olive oil

3 - 10" bamboo skewers

Cabbage Slaw

2-3 tablespoons Waterfront Bistro Remoulade

1 cup shredded green cabbage

Kosher salt, a pinch

Fresh ground black pepper, a pinch

Sandwich Fixings

2-3 French rolls

2-3 tablespoons mayonnaise

DIRECTIONS
  1. Turn grill to medium high.
  2. In a small bowl, mix olive oil, salt and pepper.  Add shrimp and toss to fully coat.
  3. In another bowl, mix together the cabbage, remoulade, salt and pepper, set aside.
  4. On each skewer alternate 2 shrimp, 2 pieces of sausage and 3 pieces green onion.  Place skewers on grill and cook each side for 2-1/2 minutes.  Place french rolls cut side down on grill to toast.
  5. To assemble the sandwich, spread mayonnaise on the toasted roll, add grilled shrimp, Andouille sausage and green onions, then top with cabbage slaw.
