Crispy Baked Chicken Nuggets

We used baked kettle chips in our coating, making these nuggets low cal and low fat.  Don't tell the kids.... They'll never know!  We think these will replace McNuggets as your kid's favorite meal.
PREP TIME: 20 minutes

1 egg- whisked
2 tablespoons milk
3 cups kettle cooked potato chips, finely crushed
1 pound boneless tenders, cut into 11/2" pieces
Cooking spray

Preheat oven to 400 degrees.

Combine milk and eggs in a bowl; set aside.

Place crushed potato chips in a gallon zip lock. Dip each chicken nugget in the egg mixture, then place in zip lock.  Shake to coat.

Place each coated chunk on a cookie sheet lined with foil and coated with cooking spray. Lightly spray chicken nuggets with cooking spray.

Bake for 15 minutes or golden.  Serve with dipping sauces.
