Baked Halibut

This is a moist, flavorful and light dish to enjoy all year round.
PREP TIME: 20 minutes  
COOK TIME:  22 minutes

Nonstick vegetable oil spray

2-1/2 cups breadcrumbs

3 tablesppons finely grated parmesan cheese

2 tablesppons finely chopped fresh Italian parsley

1 tablespoon finely chopped fresh thyme

2 teaspoons finely grated lemon peel

Salt and pepper to taste

3 tablespoons butter, melted

6 6-ounce halibut (or cod) fillets

  1. Preheat oven to 300°F.  Spray rimmed baking sheet with nonstick vegetable oil. 
  2. In medium sized bowl, mix breadcrumbs, cheese, herbs, and lemon peel; sprinkle with salt and pepper.  Drizzle the melted butter over and toss with a fork to incorporate fully.
  3. Sprinkle both sides of each fillet with salt and pepper and place on prepared baking sheet.  Divide breadcrumbs among fillets to cover top, pressing to adhere. 
  4. Bake halibut until opaque in center, about 20 minutes.  Turn on broiler and broil halibut fillets just until breadcrumbs start to turn brown, about 1 minute.  Ready to serve!
