Baked Doughnuts

If you have the time to make these delicious doughnuts...They are definately worth it!

INGREDIENTS

1 c. dried currents

1 envelope active dry yeats

Granulated sugar

3 c flour

3/4 t nutmeg

1/4 t cinnamon

3/4 c warm milk

1 lg. egg

1 lg egg yolk

1 stick unsalted butter softened

4 T melted butter

2 t salt

DIRECTIONS
  1. Place the currants in hot water and let stand until softened, about 20 min.  Meanwhile, stir the yeast with 2 T of warm water and a pinch of sugar in a small bowl and let stand until foamy (apprx. 5 min.)
  2. In a standing mixer bowl (fitted with a dough hook) combine the flour, nutmeg and cinnamon with 1/4c of sugar.  Add milk, egg, egg yolk and half of the softened butter; beat at low speed for 3 min.  Beat in the yeast, then add the salt.  Beat the dough on med. speed until soft and silky, about 8 min (the dough should pull away from the bowl).
  3. With the machine on, add the remaining softened butter to the dough in small amounts, beating at low speed between additions until incorporated.  Drain the currants, press out excess water, beat into dough on low speed.  Transfer the dough to a greased bowl, cover and let stand in a warm place until doubled in bulk, about 1 hr.  Punch down, reform into a ball and return to the bowl.  Cover and let stand until billowy, 1 hour.
  4. Grease 2 large baking sheets.  Turn the dough out onto a work surface and cut into 12 pieces.  Roll each piece into a ball and arrange 6 balls on each baking sheet.  Cover with plastic wrap and let stand for 10 minutes.  Using lightly floured hands press each ball into a 4" circle.  Using an 1 1/4 " round cutter, cut out the centers and return the holes to the baking sheet.  Cover loosely with plastic wrap and let stand for 1 hr., until risen slightly.
  5. Preheat the oven to 400 degrees.  Bake the doughnuts on the center rack of the oven for 25 minutes.  The doughnuts are done when they are golden and puffy.
  6. Spread sugar in a shallow bowl.  Brush the hot doughnuts and holes on both sides with the melted butter and dredge them in sugar.  Place on platter and serve.
