On the Go Oatmeal Bars

Packed with dried fruit, nuts and flavor. A healthy and light dessert, or make them a snack for a little extra energy!!

PREP TIME: 30 min.

COOK TIME: 20 min.

1/2 c butter
1/2 c maple syrup
1/4 c brown sugar
2 1/2 c rolled oats (not quick)
1/3 c wheat germ
2 t vanilla
1 t orange rind
1 t cinnamon
1/4 t salt
1/4 c craisins
1/8 c chopped almonds
1/8 c chopped pecans
  1. Preheat oven to 325 degrees. Line a 9" square baking pan with parchment paper (spray liberally with Pam), leaving a 1" overhang on two sides so you can easily lift the baked bars out of the pan.
  2. In a large saucepan, heat butter, maple syrup and sugar over medium heat, stirring occasionally. Boil for 1 minute; remove saucepan from heat. Stir in oats, wheat germ, vanilla, orange rind, cinnamon and salt until well combined. Stir in dried fruit until well combined.
  3. Spread mixture evenly in pan, pressing down firmly using the back of a large spoon. Bake 30 to 35 minutes, until a deep golden color. Cool completely in pan on wire rack. Once cooled, use parchment to lift onto a cutting board; cut into bars with a large serrated knife. Bars may be stored in an air tight container up to 1 week. (They won't last that long!!)
