Praline Pumpkin Pie

Pumpkin pie doesn't get better than this!
PREP TIME:  15 min.
COOK TIME: 75 min.

1 pie crust

1 c + 2 T canned pumpkin

3/4c sugar

3/4 c whipping cream

6 T milk

2 lg. eggs, beaten

1 T + 1 1/2 t dark rum

1/4 t cinnamon, nutmeg, cloves & ginger


1/2 c light brown sugar

1/2 c coarsely chopped pecans

2 T unsalted butter melted


Whip Cream

  1. Preheat oven 450 degrees.  Place the crust into a pie plate, pierce the bottom with a fork and bake for 10 min.  Remove from the oven and reduce the oven to 400 degrees. 
  2. Place the next nine ingredients into a large bowl and whisk together until combined.  Pour into the prepared crust.  Cover edges of the crust with foil and bake 20 min.  Remove the foil and  reduce the oven to 350 degress and bake until the filling is set, about 30 min.  Pie is done when a knife is inserted in the center and comes out clean.  Remove from oven.
  3. Mix topping ingredients and sprinkle over pie.  Place under the broiler, until topping bubbles.  Remove and let cool for at least one hour.  Serve topped with whipped. cream.
