Key Lime Pie

Tart and sweet, served cold, this pie is a perfect summer dessert.  Don't forget the whipping cream.....

COOK TIME:  25 minutes
INGREDIENTS
Crust:
1-1/4 cups graham cracker crumbs
2 tablespoons sugar
5 tablespoons unsalted butter, melted
Filling:
1 (14 ounce) can sweetened condensed milk
4 large egg yolks
1/2 cup plus 2 tablespoons fresh or bottled key lime juice
Topping:
3/4 cup chilled heavy cream
1 Tablespoon sugar
1/2 teaspoon vanilla
DIRECTIONS
  1. Preheat oven to 350 degrees F.
  2. Crust:  In a small bowl, combine graham cracker crumbs, sugar and butter, mixing until butter is fully incorporated and graham crackers moistened. Press crumb mixture into bottom and up sides of a 9-inch glass pie pan.  Bake crust for 10 minutes; cool in pie plate on rack.
  3. Filling:  In a medium bowl, whisk together condensed milk and yolks until thoroughly combined.  Add lime juice; whisk until combined well and slightly thickened.  Pour filling into cooled crust and bake in center of oven for 15 minutes.  Cool pie completely on rack (filling will set more as it cools), then chill, covered, for at least 8 hours.
  4. Topping:  Combine heavy cream, sugar, and vanilla in bowl.  Whip with an electric mixer until cream holds stiff peaks.
  5. Serve pie topped with whipped cream.
