Pineapple/Coconut Ice Cream in Wonton Cups

This is an easy to make, refreshing, lite dessert. A visual delight!!!

INGREDIENTS
1/2 gallon pineapple/coconut ice cream
16 fresh mint leaves
8 wonton wrappers
vegetable spray
Optional: sugar and cinnamon
DIRECTIONS
  1. Lightly spray 8 wonton wrappers (both sides) and place in a muffin pan, shaping to fit.  For added flavor, sprinkle inside of cups with sugar and/or cinnamon.  Bake wonton cups in 300 degree oven until lightly browned, approximately 8 minutes.  Cool in pan before removing.  The wonton cups can be made earlier in the day and stored in a sealed container.
  2. When ready to serve, place a scoop of ice cream in each wonton cup and garnish with fresh mint.
