Sweet Treat Toffee Bars
If you like chocolate and you like toffee, you'll love these bars.
SERVINGS:  36 squares
PREP TIME: 15 minutes
COOK TIME:  25 minutes
1 cup unsalted butter
1 cup light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
8 ounces milk or semi-sweet chocolate, chopped into 1-inch squares or use chips
3/4 cup walnuts, coarsely chopped
3/4 cup dried cranberries, coarsely chopped
  1. Preheat oven to 350° F.
  2. In a medium sized bowl, beat the butter, sugar, egg yolk, and vanilla until creamy.  Mix in flour, 1/2 cup at a time, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary.
  3. Scoop batter into a 9 x 13-inch pan, smooth out with a rubber spatula.  Bake 20 to 25 minutes until light brown.
  4. Remove from the oven and immediately place chocolate on top.  Use a spatula or knife to gently spread melting chocolate until completely covered. Sprinkle nuts and cranberries over the chocolate. Cool for 15 minutes before cutting into squares.
