Another Recipe Kitchen Tested by the Party Saviors

Cauldron Cakes

If you missed the Hogwart's Express, where they sell these delicious spice cakes, you can whip up a batch in your own kitchen.
COOK TIME: 25 min.

3 eggs

1 1/2c sugar

1/2 c butter, softened

3/4 t cinnamon

1/8 t ginger

1 t vanilla

2 c flour

3 1/2 t baking powder

1 t salt

1 c milk


1/2 c brown sugar

1 T water

3 T butter, softened

1/4 t salt

1/4 t cider vinegar

2 T c heavy cream

1/4 t rum extract

  1. Preheat oven 350F.
  2. Mix the first six ingredients in a large mixing bowl.  Beat for about 2 minutes.
  3. Combine the flour, baking powder and salt in a medium bowl.  Add, gradually,  the dry ingredients and milk alternately into the egg mixture.  Beating after each addition.
  4. Spray muffin tins with cooking spray.  Pour batter into tins (not too high as they should be semi-flat) Bake 20 to 25 minutes.  Test with a toothepick, when inserted it should come out clean.
  5. Glaze: Place brown sugar and water in a small saucepan over medium heat.  Bring to a gentle boil, stirring frequently, until the mixture reaches 240 F on a candy thermometer.
  6. Stir in butter, salt, vinegar and 1/4 c heavy cream.  Set aside and cool to room temp.  Then stir in rum extract.  Drizzle over cakes.
