Parsnip & Pear Latkes

Pear and parsnip combine to bring a fresh flavor enhanced by the zest of a horseradish sauce.  YUM!

COOK TIME: 8 min.


1 - 6 oz Bosc pear, under ripe (quartered and cored)

1 - 7 oz parsnip, peeled and cut into 1" pieces

1 lg. egg, beaten

1 1/2 T chopped celery leaves

1 1/2 t drained white horseradish

3/4 t  salt

1/2 c panko

Vegetable oil


1 c sour cream

1-2 T prepared horseradish (to taste)

1 T chopped celery leaves


  1. Using a coarse grating bade, shred pear in a food processor.  Place on paper towels; squeeze VERY dry.  Transfer to a large bowl.  Shred parsnip in the food procesor; add pear.  Mix in the next 4 ingredients. Add the panko and a sprinkle of black pepper.  Coat the bottom  of a large skillet with oil; heat over medium heat.  Drop batter ( 1/8 c ) onto the skillet; flatten to 1/2" thinkness.  Saute untiil brown and cooked through, about 2-4 minutes per side, til golden brown.  Drain on paper towels.  
  2. Combine sauce ingredients in a small bowl.  Serve a dollop on top of each Latke.
