Stuffed Chirizo Mushrooms with Manchego

Add a little zing to your stuffed mushrooms with chirizo.  Your choice how spicy you want to make it.

INGREDIENTS

24 large white or cremini mushrooms

6 Tablespoons butter

3/4 cup onion, chopped

2 Tablespoons garlic, minced

5 ounces chirizo sausage

1/4 cup cilantro, chopped

1/2 fresh bread crumbs, toasted

1/2 teaspoon black pepper

1/4 cup finely shredded Manchego

  1. Preheat oven to 375 degrees.  Line a rimmed baking sheet with foil.
  2. Remove stems from mushrooms and chop finely reserving 1-1/4 cups.
  3. Heat butter in saute pan.  Add onions and cook until soft.  Add garlic and chopped stems, cook until stems wilt, about 3 more minutes.  Stir in chirizo and cook until brown.  Turn off heat, stir in toasted breach crumbs, cilantro and pepper.
  4. Place mushroom caps on baking sheet and stuff with chirizo mixture.  Bake for 12-15 minutes.  Remove from oven and sprinkle with Manchego.
