Grilled Quesadilla with Smoked Gouda

Grilling is a quick and easy way to prepare quesadillas.  The smoked gouda and proscuitto make a great flavor combo.  Add caramelized onions and you have perfection!!
PREP TIME: 40 minutes

2 Tablespoons butter
1 large onion, thinly sliced
1 Tablespoon brown sugar
1/4 teaspoon white wine vinegar
1 1/2 cups grated smoked Gouda cheese
4 10-inch-diameter flour tortillas
2 ounces prosciutto, roughly chopped
2 tablespoons  butter, melted


Melt 2 Tablespoons butter in heavy medium skillet. Add onion, brown sugar and vinegar; sauté over medium heat until onion is golden, stirring frequently, about 30 minutes. Cool to room temperature.

Preheat grill. Sprinkle cheese over half of each tortilla. Sprinkle prosciutto and caramelized onions over cheese. Season with pepper. Fold other half of each tortilla over cheese mixture. Brush tortillas with melted butter.

Grill quesadillas until grill marks begin to appear and cheese is melted, Transfer quesadillas to work surface. Cut each into 4 triangles. Arrange on platter and serve hot.
