Pizza with Potatoes and Truffle Oil

Who would have thought it? Potatoes on pizza?  Well....It was a big hit with our picky testers!!
PREP TIME: 30 minutes

1 lb of pizza dough

2 tablespoons truffle oil
1 tablespoon olive oil
3 cloves garlic, thinly sliced
3 medium, yukon gold or red potatoes
1/2 cup mozzerella
1/2 cup shredded Parmesan
2 teaspoon fresh thyme leaves- chopped
Kosher salt and freshly ground black pepper



Thaw pizza dough, if frozen. Dust  pizza pan with flour. Roll out and press dough into pizza pan.

Preheat the oven to 425°F.

Thinly slice potatoes with mandoline and toss with 1 tablespoon olive oil, thyme, salt and pepper.  Spread on oiled baking sheet and bake until tender- approx 15 minutes. 

Brush the dough with 1 tablespoon of the truffle oil, and sprinkle with garlic slices. Cover with potato slices, and drizzle with the remaining 1 tablespoon Truffle oil.  Top with cheeses.    

Bake in the center of the oven until the dough is golden at the edges and the cheeses are bubbling gently, about 15 to 20 minutes. Remove, let sit for 5 minutes, then cut and serve.
