Crispy Chicken Burritos

These crispy little burritos were the hit of the party - Our guests couldn’t get enough!
PREP TIME: 60 minutes
1 TBSP olive oil
  Cooking spray
  1/4  cup  chopped onion
  1  garlic clove, minced
  1/2  pound  ground chicken
  1/4  cup  water
  1/2  tablespoon salsa
  1/2  teaspoon dried oregano
  1/2  teaspoon ground cumin
  1/2 teaspoon chili powder
  1/8 teaspoon crushed red pepper flakes
  1/2  (4.5-ounce) can chopped green chilies, undrained
  8 sheets of phyllo dough
  1  cup  (4 ounces) shredded Mexican blend cheese
Saute chopped onion in olive oil for 3 minutes - add minced garlic, and cook for another 3 minutes or until onion and garlic are tender, stirring frequently. Add ground chicken, and cook mixture for 10 minutes or until browned, stirring to crumble. Stir in water and the next 5 ingredients (through chopped green chilies). Cover mixture and cook for 5 minutes over medium heat.
Place one phyllo sheet on work surface (cover remaining sheets with damp towel to keep from drying out).  Cut sheet in half lengthwise.  Spray each half with cooking spray.  Place 1 TBSP filling, topped with 1 tsp shredded cheese at one end of phyllo half and roll up- tucking in the ends to form the burrito.  Repeat with remaining half.  Repeat with remaining phyllo sheets.  Cook at 425 degrees for 15  to 20 minutes or until golden.
