Clams Casino

COOK TIME: 10 min.

2 T olive oil
2 1/2 oz sliced pancetta or bacon, finely chopped
1 c finely diced red bell pepper
1 small onion diced
2 lg garlic cloves, minced
1/4 t dried oregano
1/2 c dry white wine
5 T freshly grated Parmesan
Salt and freshly ground black pepper
2 dozen butter clams, shucked, chopped and reserve the bottom shells
    1. Cook the pancetta in olive oil (if using bacon omit olive oil) in a large skillet over medium high heat until crisp and golden. Using a slotted spoon, transfer the pancetta to a plate and reserve.
    2. Add the bell pepper, onion, garlic, and oregano to the same skillet and saute until the onions are tender and translucent, about 5 minutes.
    3. Add the wine and simmer until it is almost evaporated, about 2 minutes.
    4. Remove the skillet from the heat and cool completely at room temperature.
    5. Add the reserved pancetta and 2 tablespoons of Parmesan cheese into the vegetable mixture and combine. Season the mixture, to taste, with salt and pepper.
    6. Preheat the oven to 500 degrees F.
    7. Line a heavy large baking sheet with foil.
    8. Place the bottom clan shells on the baking sheet and fill half full with the chopped clams and spoon the vegetable mixture atop the clams, dividing equally and mounding slightly.
    9. Sprinkle with the remaining 2 tablespoons of Parmesan.
    10. Bake until the clams are just cooked through and the topping is golden, about 10 minutes.
    11. Arrange the clams on the platter and serve.
