Grilled Provoleta

A perfect appetizer for the grill... and SO EASY!  No wonder Argentines are crazy about it.

PREP TIME: 5 minutes
COOK TIME: 2 minutes
  • 1/2 pound Provolone round
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon red pepper flakes
  • Rustic Italian bread slices

    Brush provolone with olive oil. Place on a hot grill for 50 seconds. Turn the provolone over and grill for another 50 seconds. Transfer cheese to a serving plate. Sprinkle with dried oregano and red pepper flakes. Drizzle with chimichurri sauce (either homemade or bottled).  Serve immediately, using appetizer knives to spread the cheese mixture onto the bread.
