Avocado Corn Salsa

Corn, avocado and black beans give this salsa an addictive quality!

INGREDIENTS

1 1/2 cups fresh (or frozen and thawed) corn kernels

1 4 oz can chopped olives

1 1/2 cups chopped fresh tomatoes

3/4 cups chopped sweet onion

1/2 cup chopped red bell pepper

1 to 3 tsp finely chopped jalapeno pepper (to taste)

2 medium ripe but firm avocados cut into 1/3" dice

1 cup canned black beans- drained and rinsed

2 TBSP olive oil

2 TBSP fresh lime juice

DIRECTIONS
Combine all ingredients except avocado.  Gently fold in avocado chunks and chill for 2 hours.  Serve with tortilla chips.
