Roasted Garlic Dip w/ Herbs

Make this the day before the party so the nutty taste of the garlic and flavorful herbs are accentuated in this delectable dip.
YIELD: 3 cups
PREP TIME: 15 min
COOK TIME: 1 1/14/ hr.
4 whole garlic heads
2 Tbs. olive oil
1 fresh rosemary sprig
1 fresh thyme sprig
1 1/2 cups sour cream
6 Tbs. mayonnaise
1 1/2 Tbs. chopped fresh rosemary
1 1/2 Tbs. chopped fresh thyme
3 Tbs. chopped fresh flat-leaf parsley
3/4 tsp. Worcestershire sauce
2 tsp. fresh lemon juice
1 1/2 tsp. kosher salt
Freshly ground pepper, to taste
Chips for dipping
  1. Preheat an oven to 400°F.

    2. Cut the tops off of the garlic heads and brush the cut surface with the olive oil. Put the garlic on a baking sheet lined with foil. Arrange the rosemary and thyme sprigs on or around the garlic. Cover with  aluminum foil. Roast until the garlic cloves are soft and lightly browned, about 1 1/4 hours. Let cool completely.

    3. Squeeze the pulp from the garlic cloves into a medium size bowl. Add the sour cream, mayonnaise, chopped rosemary, thyme and parsley, Worcestershire sauce, lemon juice, salt and pepper. Blend until well combined. Cover the dip with plastic wrap and refrigerate for at least 30 minutes (the longer the more flavorful).

    4. Serve the dip with potato or corn chips.
