Mediterranean Veggie Dip

A flavorful dip that will add zip to any cracker or veggie!!

RECIPE YIELDS: 1 1/2 c.
PREP TIME: 15 min.
INGREDIENTS
16 oz. plain greek yogurt
1/4 c chopped roasted red sweet pepper, drained
1/4 c crumbled feta cheese
2 T thinly sliced green onions (1 T dried chives)
2 T kalamta olive tapenade
2 T finely chopped cilantro
1/2 t dried oregano
Dippers: Crackers, pita chips, cucumber slices, red pepper, broccoli florets, and white button mushrooms
DIRECTIONS
  1. Place a colander over a bowl. Line with cheesecloth or paper coffee filter. Spoon yogurt into colander, cover with plastic and refrigerate at least 24 hours. Remove; drain and discard liquid. (Can refrigerate covered up to 1 week.)
  2. In a small bowl combine yogurt, sweet red pepper, feta cheese, green onion, tapenade, cilantro and oregano. Cover and chill up to 24 hours. Stir before serving. Serve with dippers.
