Steph’s Guacamole

This recipe is guaranteed to be a favorite with your guests.  It looks great and tastes even better.  Best of all, it is healthy with a wonderful fresh taste.

PREP TIME: 20 minutes
INGREDIENTS
4 fresh medium sized roma tomatoes – diced.  
1 ripe avocado - diced
1 medium onion – diced
4 oz. queso blanco (white cheese) – diced
3-4 cloves of garlic – minced
½ cup cilantro – chopped
1 T lemon juice
salt to taste
DIRECTIONS
Dice the tomatoes, avocado, onion and queso blanco into ½ inch or smaller pieces.  This will make it easier for dipping.
Place tomato, avocado, onion, queso and garlic in bowl and toss to mix.
Add lemon juice and salt and toss again.
Add cilantro and fold into mixture.
This salsa gets better if you let it sit for 20-30 minutes before serving. 
Place in serving bowl and surround with your favorite corn chips.
