Another Recipe Kitchen Tested by the Party Saviors

A traditional Lebanese salad, similar to the traditional tabbouleh, is the base for this lettuce bite!

1 c cracked wheat, or bulgar

15 oz can garbanzo beans drained

3 T scallions, diced

3 T fresh mint, chopped

2 T flat-leaf parsley, chopped

Juice of 2 lemons

1/3 c olive oil

1/2 t ground cinnamon

Salt and pepper

Little gem or butter leaf lettuce, for serving

  1. Place the cracked wheat in a large bowl, cover with cold water and let stand at room temperature overnight.  The next day drain well, squeezing the grains between your hands.
  2. Add the garbanzos and remaining ingredients (except lettuce), season to taste, toss well.  Best if made in the morning, the longer it sits the more the flavors develop.
  3. Separate lettuce leaves into small "bowls".  Place one or two heaping spoonfuls of bulger mixture in each lettuce bowl, arrange on a serving dish.
